Austral fish (salmon, robalo, southern hake)

A group of cold-water fish on the regional table, of mixed origin: wild-caught and farmed.

Very different species coexist under "catch of the day". Salmon in Chile is, in the vast majority of cases, farmed; robalo and southern hake are wild-caught. The difference matters for price, texture and for anyone who wants to choose with criteria.

The useful question at the table is not "is it fresh?" but "which species is it and where is it from?".
