"Patagonian fire" is used as a commercial label far more often than as a technical description. Strictly, it means a long cooking with wood turned to embers at a controlled distance, over hours. Lamb on the cross is its most recognisable form: the animal splayed on a cross, tilted towards the fire, turned by hand for three to five hours.

Observable signals

  • There is visible firewood or a hearth, not just bagged charcoal.
  • The service is announced in advance or works by order. A multi-hour cooking is not improvised at nine in the evening.
  • Staff can say which wood they use and where it comes from.
  • The meat is served by cut, not as a uniform portion off a griddle.
